Marque Engineering developed a prototype and implemented full MEP Engineering for this southern style restaurant concept that is open for breakfast and lunch. Prior to the design, Marque Engineering visited the headquarters in Jacksonville, FL as well as some existing restaurants to facilitate the prototype development. Marque Engineering has engineered 52 restaurants for this chain which are concentrated in the southern U.S states and extended up to Ohio. These restaurants average 2,800 square feet in size, which includes a dining area, restrooms, kitchen, and storage area. Mechanically, these restaurants include an exhaust hood with a heated makeup air unit, exposed ductwork in the dining area, gas fired equipment under the hood, and an external grease interceptor. The electrical engineering includes power and LED lighting throughout, including specialty lighting in the dining area.
